Brownie Cookies- Girls Only!

"Not exactly a man's cookie."

Every once and awhile you just need some girly over the top cookies.  Or maybe that's just in my house since 80% of the occupants are of the female variety(I'm definitely including the dog in that).  Livy and I finished making these, and quickly followed it up with, "Daddy can't have any of these, they are for girls only."  I can support that, because he can wipe out a batch of cookies quicker than anyone I know.

Obviously you can choose to forgo the pink and purple buttercream and the matching sprinkles, that should help make them more masculine, but you should definitely try them all fancied up like this, it elevates the whole experience.  They taste just like brownies and are even better when topped with almond buttercream.  You can find the recipe for the butter cream here.

"Where do you buy your sprinkles?"

I'm often asked where I find my sprinkles. I have an unhealthy addiction of buying sprinkles, and  I buy all of my sprinkles from

Ingredients

1/2 cup butter, room temperature
1 cup light brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1 teaspoon salt
1 cup cocoa powder
1/2 cup flour
1/2 teaspoon baking soda

Instructions

Preheat oven to 350°F. Line two baking sheets with parchment paper, and set aside.

In your mixer of choice, cream the butter and sugar together on medium speed for 2-3 minutes until fluffy. Add the egg, vanilla, and salt, and mix for another minute.

On low speed mix the remaining ingredients until just combined.

Using a 1/2 oz cookie scoop, scoop balls of brownie mixture and roll into a ball in your hands. Place on cookie sheet and flatten a little bit with your hand or the bottom of a glass to make a disc.

Bake for 7 minutes, allow the cookies to cool on cookie sheets before transferring them.

Top with buttercream of your choice! Almomd
